OMG Chicken Recycled
Last week, I shared my recipe for what Rick called "Best Chicken Ever (aka, OMG Chicken)." Well a couple of days later I wound up working much longer than expected and didn't want to visit the grocery store, and did something I never do. That right my friends, I ate left overs. I am a food snob. I NEVER eat leftovers. If I bring a meal home from a restaurant, it's usually for Rick, or someone else. The disclaimer with that is that I will absolutely, NEVER turn down cold chinese chicken fingers, or refrigerator pizza.
Growing up, I ate my share of leftovers, but as an adult I've become obsessed with never eating leftovers. That said, I'm sure you can imagine my horror of knowing that after working 10 hours I could go to the busy grocery store, or face my worst enemy. Getting out the war paint, I went into the fridge and pulled out what was left of my friend the chicken.
Let me just tell you- this chicken 2 days later, was just as good, if not better than the original version. Here's what I did:
Diced up about 2.5 cups of the chicken
Heated a large skillet with some EVOO and a 2 cloves of garlic- I then added a bag of fresh spinach and seasoned with pepper.
In a smaller sauce pan, I boiled up 1/2 cup of water, 1/2 cup of chicken stock , and then added a table spoon of fresh lemon juice, and cous cous.
Back to the larger skillet, I added about 2 table spoons of lemon juice and the chicken. Mixing all the ingredients together making sure the flavors would all be evenly distributed.
On the bed of lemon infused cous cous I laid out the spinach and chicken blend, and garnished the plate with 2 slices of lemon.
Sadly, there were no leftovers... but had there been, I just may have eaten them!
