Pork-Prise!
As much as I love to cook, I don't have hours to spend in my kitchen each night making dinner- after a full day of clients, I hardly have a half hour... which is when my crock pot becomes a kitchen essential to me.
This afternoon (Monday,) my friend D is coming by with her dog for a puppy playdate, and we are going to make sweets for our sweeties! Because of the timing of her visit, and Rick coming home from work, I know that I won't have time to clean up our mess, and make an elaborate meal by the time dinner is normally on the table.
So out comes my good friend and savior, the Crock Pot. I try and spend time with this awesome appliance at least every once every other week. This week I'm using it to make something I've never tried before, and I'm not even sure what to call it- so for now, let's title this recipe "Pork-prise!"
While at the grocery store, I had in hand my list of things for what D and I were making, and for my the special dinner I'm making tomorrow, but low and behold, had completely forgot to think about what we were going to have for dinner tonight.
So, I grabbed some boneless porkchops. We haven't had pork in over a month (after a very casual remark from Rick about how often we were having it, I avoided preparing it). Pork in hand, I returned home only to realize that I had no idea how I was going to cook it. Normally, I'd either toss it in bread crumbs and bake it, or simmer it in apple juice- I wanted a change. Scanning over the pantry, there weren't a lot of options... but never one to back down I dug deep and came up with a can of tomato soup and a package of dry onion soup mix.
In my ingredients went, as well as a couple of cups of water to thin out the thick layer of tomato soup, and cooking away they are. If nothing else, it certainly smells delicious in my kitchen right now- and soon it will smell even yummier when we make our special Valentine's Day treats!
I'll be sure to add to this entry with how everything turned out- I love to try new things and experiment in the kitchen, but it doesn't always turn out as expected... how do you think this dish will come out?
